ONE of the region’s top hotels is setting up shop at a leading catering college to inspire the next generation of chefs and hospitality staff.

The team from award-winning Rudding Park, Harrogate, will work with students at Darlington College to create an evening of fine cuisine, which will be open to the public.

Executive chef Matthew Wilkinson, consultant chef Steph Moon, deputy head food and beverage manager Chris Snoxall and mixologist Jordan Sweeney will stage a day of masterclasses culminating in a culinary experience to remember.

For one night only, Rudding Park@The Glasshouse will take place from 6pm on Thursday 24 November, costing £26.95 per person. To book contact (01325) 503050.

Guests can experience cocktails and canapés followed by a three course dinner. To start; crispy tiger prawns or vegetarian burrata with spicy chutney and walnuts. For main; pork loin or mushroom pappardelle and for pudding; apple tarte tartin or chocolate and blood orange tart.

Darlington College senior lecturer Dawn Cobb-Neate said: “I met some members of the Rudding Park HR team at an event and we talked about mutually beneficial opportunities to collaborate. I was delighted that we were able to arrange for our students to visit the hotel and experience a tour with the chance to discuss potential career options.

“We decided to stage an event in the college restaurant involving around 20 of our students including those studying level 2 food and beverage services, level 3 professional cookery and level 5 foundation degree hospitality and tourism management.

“For the students it’s like an extended practical interview and one of our under-graduates has already been offered a job. It gives them all the opportunity to hone their skills, be inspired by and work with some leading lights of the industry from one of the region’s best hotels.”

Rudding Park’s head of learning and development Kate Robey said: “In order for Rudding Park to thrive as a hospitality business it is crucial we invest today in the talent of tomorrow, so we are thrilled to be collaborating with Darlington College.”

Rudding Park launched a Chef Development Programme this year for those interested in the industry. Open to graduates, school leavers, entry-level commis chefs or anyone looking for a career change, the programme develops core and advanced culinary skills.
